The Legend

Todd Waite will take his final bow as Sherlock Holmes in Ken Ludwig’s Baskerville: A Sherlock Holmes Mystery, marking his sixth time in the role. Since his debut in 1999, Todd has brought countless characters to life in 135 productions at Alley Theater. A nod to Todd Waite; this smooth, slightly sweet, and refreshing whiskey-based drink that blends the warmth of Irish whiskey with the bright flavors of peach and citrus. The combination of Jameson Irish Whiskey, peach liqueur, lemon juice, and simple syrup creates a flavor profile reminiscent of a sweet green tea. It’s light, easy-to-drink cocktail, perfect for casual sipping. Bravo Todd!

  • Sweet & Fruity – Peach liqueur brings a gentle, juicy sweetness.
  • Smooth & Mellow – Jameson’s triple-distilled whiskey adds warmth without overpowering.
  • Bright & Citrusy – A splash of lemon juice balances the sweetness.
  • Refreshing – Served over ice for a cool, crisp sip.

Recipe

  • 1.5 oz Jameson Irish Whiskey
  • 0.5 oz Peach Schnapps (or peach liqueur)
  • 0.5 oz Fresh lemon juice
  • 0.5 oz Simple syrup (optional, for extra sweetness)
  • Ice
  • Lemon Lime Soda
  • Lemon wedge or mint sprig and black Himalayan salt for garnish

How to Make It

  • Fill a shaker with ice.
  • Add Jameson, peach liqueur, lemon juice, and simple syrup.
  • Shake well until chilled.
  • Strain into a rocks glass over fresh ice.
  • Top with Sprite or Ginger Ale
  • Garnish with a lemon wedge or a mint sprig for a fresh touch.
  • Black Himalayan Salt Rim (optional)
